Resumo:
O tomateiro é uma hortaliça amplamente cultivada nas mais diversas regiões devido a sua adaptabilidade e alta demanda pelo fruto, com produção de cerca 205 mil toneladas/ano no Estado do RJ. Foi na busca por produção mais sustentável que surgiu o Sistema de Produção denominado TOMATEC que tem por premissa produzir tomates de alta qualidade e com o mínimo de resíduos de agrotóxicos. O objetivo do presente trabalho foi disponibilizar e avaliar tecnologias pós-colheita que propiciam a manutenção da qualidade e vida útil dos mesmos através da aplicação de etileno exógeno e o uso de revestimentos comestíveis. Os tomates utilizados nos experimentos foram obtidos em três propriedades localizadas no estado do Rio de Janeiro (São Gonçalo, Tanguá e Nova Friburgo) e em todos os experimentos o delineamento adotado foi inteiramente casualisado. Os experimentos com etileno foram desenvolvidos em três etapas e os tomates estavam com a coloração verde maturo e em cachos com 3 a 4 frutos. No primeiro experimento, os mesmos foram colocados em uma câmara plástica hermeticamente fechada onde se aplicou mistura gasosa em fluxo dinâmico composta por etil a 5%, com concentração de 100μL.L-1, compondo os seguintes tratamentos com tomates „BRS Nagai‟: exposição ao etileno por 16 horas e seu respectivo controle (0h); exposição ao etileno por 24 horas e seu respectivo controle (0h). Após 10 dias de armazenamento, quando 85% dos frutos alcançaram coloração uniforme nos cachos, foram realizadas as análises físicas e químicas. Para o segundo experimento se testou concentração diferente, ou seja, foram utilizados 150 μL.L-1 de etileno e duas cultivares de tomates italianos, „BRS Nagai‟ e „Ravena‟. Os tempos de exposição ao etileno utilizado foram: 0, 16, 24 horas. As avaliações físicas e químicas foram realizadas quando os tomates apresentavam 85% da coloração avermelhada (percepção visual). Para o terceiro experimento utilizou-se o „BRS Nagai‟ e manteve-se a concentração de 150 μL.L-1, porém se testou somente o tempo de exposição ao etileno 0 e 24 horas, com as avaliações físicas e químicas sendo realizadas de dois em dois dias por 6 dias. Os resultados alcançados neste trabalho demonstram que os tomates expostos ao etileno por 24 horas à concentração de 150μL.L-1 foram os que apresentaram a coloração mais uniforme. Além disso, na busca por ampliação na vida útil e a manutenção da qualidade dos tomates foram realizados ainda, dois experimentos com revestimentos comestíveis. No primeiro foram utilizados frutos em dois estágios de maturação, maduro e “de vez” e os tratamentos utilizados foram: revestimento A (à base de gelatina e fécula de milho), revestimento B (à base de Carboxi Metil Celulose (CMC) e o C (controle)). As avaliações físicas e químicas foram realizadas aos 0, 4 e 9 dias de armazenamento. No segundo experimento, os frutos utilizados estavam maduros e os tratamentos utilizados foram: controle (sem revestimento) e revestido (à base de gelatina, alginato de sódio e lactato de cálcio), sendo as avaliações realizadas aos 0, 3, 6 e 9 dias. Com relação ao revestimento comestível pode-se concluir que tanto para os tomates maduros quanto para os “de vez”, os dois revestimentos influenciaram positivamente na aparência dos frutos (maior brilho) e não interferiram no tempo de vida útil. No segundo experimento, pode-se concluir que os frutos revestidos também apresentaram melhor aparência (maior brilho), além de maiores teores de pH, sólidos solúveis e acidez total titulável. Desta forma, atribuiu-se ao revestimento, potencial de utilização na pós-colheita dos frutos. Os resultados
alcançados pelo presente estudo contribuirão para estudos futuros na disponibilização de novas tecnologias de aplicação do sistema de produção TOMATEC para todas as regiões produtoras de tomates.
Abstract:
The tomato is a vegetable widely cultivated in the most diverse regions due to its adaptability and high demand for the fruit, with production of about 205 thousand tons / year in the State of RJ. It was in the search for more sustainable production that the Production System called TOMATEC emerged, whose premise is to produce high quality tomatoes with the minimum amount of pesticide residues. The objective of the present work was to make available and evaluate post-harvest technologies that promote the maintenance of their quality and useful life through the application of exogenous ethylene and the use of edible coatings. The tomatoes used in the experiments were obtained from three properties located in the state of Rio de Janeiro (São Gonçalo, Tanguá and Nova Friburgo) and in all experiments the design adopted was entirely randomized. The experiments with ethylene were carried out in three stages and the tomatoes had a ripe green color and in clusters with 3 to 4 fruits. In the first experiment, they were placed in a hermetically sealed plastic chamber where a gas mixture was applied in a dynamic flow composed of 5% ethyl, with a concentration of 100μL.L-1, composing the following treatments with 'BRS Nagai' tomatoes: exposure ethylene for 16 hours and its control (0h); exposure to ethylene for 24 hours and its respective control (0h). After 10 days of storage, when 85% of the fruits reached uniform color in the bunches, physical and chemical analyzes were performed. For the second experiment, a different concentration was tested, that is, 150 μL.L-1 of ethylene and two Italian tomato cultivars, „BRS Nagai‟ and „Ravenna‟ were used. The exposure times to ethylene used were: 0, 16, 24 hours. Physical and chemical evaluations were carried out when the tomatoes had 85% of the red color (visual perception). For the third experiment, the 'BRS Nagai' was used and the concentration of 150 μL.L-1 was maintained, but only the time of exposure to ethylene 0 and 24 hours was tested, with physical and chemical evaluations being carried out every two days for 6 days. The results achieved in this work demonstrate that tomatoes exposed to ethylene for 24 hours at a concentration of 150μL.L-1 were the ones that showed the most uniform color. In addition, in the search for extending the useful life and maintaining the quality of tomatoes, two experiments with edible coatings were also carried out. In the first, fruits were used in two stages of maturation, ripe and “in season” and the treatments used were: coating A (based on gelatin and cornstarch), coating B (based on Carboxy Methyl Cellulose (CMC) and the C (control)). Physical and chemical evaluations were performed at 0, 4 and 9 days of storage. In the second experiment, the fruits used were ripe and the treatments used were: control (without coating) and coated (based on gelatin, sodium alginate and calcium lactate), with evaluations performed at 0, 3, 6 and 9 days. Regarding the edible coating, it can be concluded that both for ripe tomatoes and for "once in a while", the two coatings positively influenced the appearance of the fruits (greater brightness) and did not interfere in the useful life. In the second experiment, it can be concluded that the coated fruits also showed a better
appearance (greater brightness), in addition to higher pH levels, soluble solids and total titratable acidity. In this way, the coating was attributed the potential for use in the post-harvest of the fruits. The results achieved by the present study will contribute to future studies in the provision of new technologies for applying the TOMATEC production system to all tomato-producing regions.
